  • 1 pound smoked kielbasa sausage, sliced into 1/2-inch rounds

Instructions

  1. Brown the kielbasa: Heat 1 tablespoon of olive oil in a large Dutch oven over medium-high heat. Add the sliced kielbasa in a single layer (work in batches if needed) and cook for 3-4 minutes per side until deeply caramelized and slightly crispy. Transfer to a plate and set aside.
  2. Sauté the aromatics: Reduce heat to medium and add the remaining 1 tablespoon of olive oil. Add the diced onion, carrots, and celery. Cook, stirring occasionally, until the onion is translucent and the vegetables soften, about 5 minutes. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Add the cabbage: Stir in the chopped cabbage and cook for 3-4 minutes, stirring frequently, until it begins to wilt. Season with a pinch of salt and pepper.
  4. Build the broth: Sprinkle the smoked paprika and dried thyme over the vegetables and stir to coat. Cook for 30 seconds. Pour in the diced tomatoes with their juices and the chicken broth. Add the bay leaf and stir well.
  5. Simmer the soup: Bring to a gentle boil, then reduce heat to low, cover, and simmer for 20-25 minutes until the cabbage is tender. Taste and adjust seasoning with salt and pepper.
  6. Finish and serve: Return the browned kielbasa to the pot and warm through for 2-3 minutes. Remove the bay leaf. Ladle into bowls and garnish with fresh parsley, sour cream, or Dijon mustard. Serve with crusty bread.

Notes

For best flavor, brown the kielbasa thoroughly until deeply caramelized. Use low-sodium broth to control saltiness. The soup improves with time; make it a day ahead for deeper flavor. Add kielbasa at the end to prevent it from becoming rubbery.
