  • 1/2 cup mayonnaise
  • 1/2 cup sour cream (full-fat recommended)
  • 3/4 cup crumbled blue cheese (small-curd preferred)
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon Worcestershire sauce
  • Salt and pepper, to taste
  • Celery sticks, cut into fingers
  • Baby carrots
  • Sliced cucumbers
  • Pickled jalapeños
  • Soft pretzel bites or crackers
  • Grapes or apple slices (optional)

Instructions

  1. Season the chicken breasts with salt, pepper, garlic powder, and smoked paprika.
  2. Heat 1 tablespoon of oil in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side or until fully cooked through (internal temperature of 165°F / 74°C). Remove from heat and let rest for 5 minutes.
  3. Using two forks, shred the chicken into bite-sized pieces.
  4. In a small saucepan, melt the unsalted butter over low heat. Stir in the buffalo hot sauce until combined and warm. Remove from heat.
  5. Pour the buffalo sauce over the shredded chicken. Toss to coat evenly. Set aside.
  6. In a mixing bowl, combine mayonnaise, sour cream, crumbled blue cheese, lemon juice, and Worcestershire sauce. Stir gently to keep chunks of blue cheese intact. Season with salt and pepper to taste. Chill in the fridge for at least 15 minutes.
  7. Wash and cut celery, carrots, and cucumbers into snackable pieces. Slice any optional fruit and arrange pickled jalapeños and pretzels nearby.
  8. On a serving platter or charcuterie board, spread the buffalo chicken in one section. Place the blue cheese dip in a small bowl in the center or corner. Arrange veggies, pretzels, and fruit artfully around, balancing colors and textures. Garnish with extra blue cheese crumbles or chopped fresh parsley if desired.
  9. Serve the board with small plates and napkins, encouraging guests to dip and mix flavors as they like.

For extra crispy chicken, broil for 2-3 minutes after tossing in buffalo sauce. Chill the blue cheese dip for at least 15 minutes to develop flavors and thicken. Use warm chicken when tossing in sauce to avoid clumping. Rest chicken before shredding for juicier texture.
