Instructions

  1. Place each chicken breast between two sheets of plastic wrap or in a large zip-top bag. Pound gently with a meat mallet or rolling pin until about ½ inch (1.25 cm) thick. Season both sides with salt and pepper.
  2. Set up three shallow bowls: one with flour, one with beaten egg mixed with a splash of water, and one with a mixture of panko breadcrumbs, Parmesan cheese, and Italian seasoning.
  3. Lightly coat each chicken breast in flour, shaking off excess. Dip into the egg wash, then press into the breadcrumb mixture until fully coated, pressing down gently to ensure crumbs stick well.
  4. Heat olive oil in a large skillet over medium heat until shimmering but not smoking. Fry chicken breasts 3-4 minutes per side until golden brown and crispy. Avoid crowding the pan and flipping too soon.
