  • 2 cups all-purpose flour

  • 6 tablespoons unsalted butter, cold and cubed
  • 3/4 cup buttermilk, cold (or 3/4 cup milk plus 1 tablespoon lemon juice, let sit 5 minutes)
  • Optional toppings: turbinado sugar or coarse sugar for sprinkling, vanilla ice cream or whipped cream for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced peaches, bourbon, sugar, cornstarch, vanilla extract, lemon juice, cinnamon, and a pinch of salt. Toss gently to coat the peaches well. Let sit for 10 minutes.
  3. In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, sugar, and cinnamon.
  4. Add the cold cubed butter and cut it into the flour mixture using a pastry cutter or two knives until it resembles coarse crumbs with pea-sized bits of butter remaining.
  5. Pour in the cold buttermilk and gently fold it into the flour mixture using a rubber spatula or fork. Mix just until combined; dough should be slightly shaggy.
  6. Pour the peach mixture into a 9-inch baking dish or cast-iron skillet, spreading evenly.
  7. Drop spoonfuls of biscuit dough on top of the peaches, spacing slightly apart.
  8. Optionally, sprinkle coarse sugar over the biscuit tops.
  9. Bake for 35-40 minutes until biscuits are golden brown and peach filling is bubbling.
  10. Let the cobbler rest for 10 minutes before serving.

Notes

Do not overmix biscuit dough to keep it light and fluffy. Use cold butter and keep ingredients chilled. If biscuits brown too quickly, cover loosely with foil halfway through baking. Fresh peaches are best; if using frozen, thaw and drain excess liquid. For gluten-free, substitute flour with gluten-free blend and adjust baking time. For dairy-free, use coconut oil and plant-based milk. Bourbon can be substituted with apple juice or rum extract for non-alcoholic version.
