  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 medium apples, peeled and diced (preferably Granny Smith or Honeycrisp)
  • 1 cup (120 g) toasted pecans
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Melt the unsalted butter in a medium saucepan over medium heat, stirring frequently until it foams and turns golden brown with a nutty aroma (about 5-6 minutes). Remove from heat and pour into a mixing bowl to cool slightly.
  3. Add the light brown sugar and granulated sugar to the warm brown butter and stir until the sugars dissolve and the mixture is smooth.
  4. Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract until the batter is glossy and thick.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, salt, cinnamon, and nutmeg if using.
  6. Gradually fold the dry ingredients into the wet mixture gently with a spatula until just combined, being careful not to overmix.
  7. Toss the diced apples and toasted pecans into the batter and fold gently to distribute evenly without crushing the apples.
  8. Spread the batter evenly in the prepared baking pan and smooth the top with a spatula.
  9. Bake for 30-35 minutes until the edges are golden brown and a toothpick inserted near the center comes out with moist crumbs.
  10. Cool the blondies completely in the pan on a wire rack for at least 30 minutes before slicing. Optionally, chill in the fridge for 10-15 minutes for cleaner cuts.

Use a light-colored pan to brown butter for better color visibility. Stir constantly to avoid burning. Toast pecans gently over medium-low heat until fragrant.
