  • 2 large eggs, room temperature
  • 1/3 cup (80 ml) vegetable oil (can substitute melted butter)
  • 1/4 cup (60 ml) water
  • 1/2 cup (100 g) packed brown sugar
  • 3/4 cup (95 g) all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup (75 g) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 cup (90 g) chocolate chips (semi-sweet or milk chocolate)
  • Vanilla ice cream for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Wipe your skillet if needed; no need to grease.
  2. In a medium bowl, combine brownie mix, 2 large eggs, 1/3 cup vegetable oil, and 1/4 cup water. Stir until smooth and fully combined.
  3. Spread the brownie batter evenly into the bottom of your skillet.
  4. In another bowl, cream together 1/3 cup softened unsalted butter and 1/2 cup brown sugar until fluffy.
  5. Add 1 teaspoon vanilla extract and 2 tablespoons milk (optional) to the butter mixture and mix until combined.
  6. Whisk together 3/4 cup all-purpose flour, 1/4 teaspoon baking soda, and 1/4 teaspoon salt. Gradually add to the butter mixture and stir until just combined.
  7. Fold in 1/2 cup chocolate chips.
  8. Drop spoonfuls of cookie dough evenly over the brownie batter layer in the skillet.
  9. Bake for 25-30 minutes until edges are set and golden, and the center is slightly soft and springy.
  10. Remove from oven and let cool about 10 minutes.
  11. Scoop generous portions of vanilla ice cream on top and serve warm.

Do not overbake to keep the center fudgy. Room temperature eggs and butter improve mixing. Use a silicone spatula for even spreading. Tent with foil if edges brown too fast.
