Cozy Chewy Apple Cider Cookies with Cinnamon Sugar

These soft, chewy apple cider cookies are packed with concentrated apple flavor and coated in a warm cinnamon sugar coating. Perfect for cozy nights, they come together in under 30 minutes with no chilling required.

  • 1 cup (240 ml) apple cider (unfiltered, such as Martinelli’s or local orchard brand)
  • ½ cup (113 g) unsalted butter, softened to room temperature
  • ¾ cup (150 g) packed light brown sugar (or dark brown sugar for deeper flavor)
  • ¼ cup (50 g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract (pure)
  • 2 cups (250 g) all-purpose flour (spooned and leveled)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg (freshly grated preferred)
  • ¼ teaspoon ground cloves
  • ¼ cup (50 g) granulated sugar (for coating)
  • 1 ½ teaspoons ground cinnamon (for coating)

Instructions

  1. Reduce the apple cider: Pour 1 cup of apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 12-15 minutes, stirring occasionally, until reduced to about ¼ cup and syrupy. Set aside to cool completely.
  2. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  3. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
  4. In a large bowl, beat together softened butter, brown sugar, and granulated sugar on medium speed for 2-3 minutes until light and fluffy. Scrape down sides as needed.
  5. Add egg and vanilla extract to the butter mixture. Beat on low until just combined. Add cooled reduced apple cider and mix until incorporated (mixture may look slightly curdled).
  6. Gradually add dry ingredients to wet ingredients, mixing on low until just combined. Do not overmix. Fold in any remaining flour streaks with a spatula.
  7. In a small shallow bowl, whisk together ¼ cup granulated sugar and 1 ½ teaspoons cinnamon for the coating.
  8. Using a 1.5-tablespoon cookie scoop, portion dough and roll into smooth balls. Roll each ball in the cinnamon sugar mixture until fully coated. Place on prepared baking sheets, spacing 2 inches apart.
  9. Bake for 10-12 minutes, until puffed, lightly golden around edges, and still soft in the center. Do not overbake.
  10. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Centers will sink slightly and become perfectly chewy.

Notes

Don’t skip reducing the apple cider—it concentrates the flavor and removes excess water. For best results, use room temperature ingredients and measure flour correctly by spooning and leveling. Cookies can be stored in an airtight container at room temperature for up to 5 days, or frozen for up to 3 months. For a dairy-free version, use vegan butter sticks. For gluten-free, use a 1:1 gluten-free baking flour blend with xanthan gum.
