This cozy Christmas simmer pot with orange and cloves fills your home with a warm, festive aroma using simple pantry staples. It’s the easiest way to make your house smell like a holiday card without any fuss or fancy ingredients.

Ingredients

Scale
  • 2 large oranges (navel or Valencia)
  • 2 tablespoons whole cloves
  • 3–4 cinnamon sticks (Ceylon preferred, broken in half)
  • 1 cup fresh cranberries (frozen works too)
  • 1 large apple (Honeycrisp or Fuji, cored and sliced)
  • 2-inch piece fresh ginger (sliced into thin rounds)
  • 1 teaspoon vanilla extract
  • 6–8 cups water (filtered preferred)
  • 2–3 star anise pods (optional)
  • 2–3 rosemary sprigs (optional, add last 15 minutes)

Instructions

  1. Wash oranges and apple thoroughly. Slice oranges into 1/4-inch thick rounds. Core apple and slice into similar-sized rounds. Peel ginger and slice into thin coins.
  2. Place a large pot or Dutch oven on the stove. Add orange slices, apple slices, cranberries, ginger slices, cinnamon sticks (broken in half), and whole cloves. Add star anise if using.
  3. Pour in 6 to 8 cups of water, enough to cover all fruit and spices by about an inch.
  4. Turn heat to medium-high and bring to a low boil (small bubbles around edges). Immediately reduce heat to low for a gentle simmer.
  5. Stir in vanilla extract once simmering gently.
  6. Let simmer on low heat for at least 30 minutes, ideally 1 to 2 hours. Keep an eye on water level.
  7. Add about 1 cup of water every 30 minutes as needed to keep fruit and spices submerged. Can keep going for 4 to 6 hours.
  8. After 4 to 6 hours, strain out solids and start fresh with new fruit and spices if desired, or let cool and discard.

Notes

Keep heat on low to avoid burning. Slice fruit thin (about 1/4-inch) for best oil release. Use a lid to reduce water evaporation if simmering for hours. Can refrigerate overnight and reheat next day with fresh fruit to refresh scent. For electric stoves, use lowest setting and lid to prevent boiling over. Do not leave unattended for long periods.
