one bowl banana bread - featured image

This one-bowl banana bread is forgiving, delicious, and fills your kitchen with the best kind of memory. It’s not fussy, uses pantry-friendly ingredients, and delivers a perfectly golden loaf with that crackly top we all fight over.

Ingredients

Scale
  • 3 large ripe bananas, mashed (about 1 ½ cups or 340g)
  • ⅓ cup (75g) unsalted butter, melted and slightly cooled
  • ¾ cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup (60g) sour cream or plain Greek yogurt
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon (optional but highly recommended)
  • ½ cup (60g) chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth.
  3. Add the melted butter, sugar, egg, vanilla, and sour cream or yogurt. Stir until well combined and smooth.
  4. Sprinkle the flour, baking soda, salt, and cinnamon (if using) over the wet mixture. Stir gently until just combined. Fold in the chopped nuts if using.
  5. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan gently on the counter to release air bubbles. Optionally, sprinkle a teaspoon of sugar over the batter for a crackly top.
  6. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with aluminum foil.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing (about 1 hour).

Notes

Don’t overmix the batter. Use room temperature ingredients. Measure flour correctly by spooning and leveling. Check for doneness early. Let the bread cool completely before slicing. Toast nuts for extra flavor. For a vegan version, use coconut oil, flax egg, and applesauce or dairy-free yogurt. For gluten-free, use a 1:1 gluten-free baking blend.
