These cozy cranberry brie bites with puff pastry are the perfect easy appetizer for any gathering. Made with just five simple ingredients, they come together in under 30 minutes and feature a perfect balance of flaky pastry, creamy brie, and sweet-tart cranberry sauce.

Ingredients

Scale
  • 1 package (17.3 ounces) frozen puff pastry sheets, thawed
  • 8 ounces brie cheese
  • 1 cup fresh or frozen cranberries
  • 1/3 cup granulated sugar
  • 2 tablespoons orange juice
  • 1 large egg, beaten
  • Fresh rosemary or thyme for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Make the cranberry sauce: In a small saucepan, combine the cranberries, sugar, and orange juice. Cook over medium heat, stirring occasionally, until the cranberries start to pop and the mixture thickens — about 5-7 minutes. Let it cool slightly.
  3. Prepare the puff pastry: On a lightly floured surface, unfold the thawed puff pastry sheets. Cut each sheet into 9 equal squares (3 rows by 3 rows). You should have 18 squares total.
  4. Place the pastry squares on the prepared baking sheet, leaving about an inch of space between each one.
  5. Cut the brie into 18 small pieces, about 1/2 inch each. Leave the rind on.
  6. Assemble the bites: Place a piece of brie in the center of each pastry square. Top with about a teaspoon of the cranberry sauce.
  7. Fold and seal: Gently bring the four corners of each pastry square together, pinching them at the top to create little bundles. Leave a small opening at the top.
  8. Brush with egg wash: Beat the egg with a tablespoon of water and brush it over the pastry.
  9. Bake for 15-18 minutes, or until the pastry is puffed and golden brown and the brie is bubbly.
  10. Let them cool for 5 minutes on the baking sheet before transferring to a serving platter. Garnish with fresh rosemary or thyme if desired.

Notes

Keep the pastry cold for best flakiness. Don’t overfill with cranberry sauce. Make cranberry sauce up to 3 days ahead. Watch the oven closely to avoid overbaking. For air fryer: cook at 375°F for 8-10 minutes.
