Friendsgiving charcuterie cups - featured image

These Cozy Friendsgiving Charcuterie Cups are a love letter to a little wine bar in Portland, featuring salty prosciutto, creamy brie, sweet fig jam, and crunchy phyllo shells. They’re the easiest way to bring that warm, communal feeling of Friendsgiving to your table without spending the whole day in the kitchen.

Ingredients

Scale
  • 2 packages (15 count each) frozen mini phyllo shells
  • 8 ounces brie cheese, rind removed and cut into small cubes (about 1/2-inch pieces)
  • 8 ounces prosciutto, thinly sliced and torn into pieces
  • 1/2 cup fig jam or fig spread
  • 1/2 cup dried cranberries
  • 1/3 cup toasted walnuts, roughly chopped
  • 1/4 cup fresh rosemary leaves, finely chopped
  • Flaky sea salt, for finishing
  • Fresh black pepper, to taste
  • 1/4 cup honey (optional, for drizzling)
  • 1/4 cup sliced green olives stuffed with pimento (optional)
  • Fresh figs, sliced (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
  2. Arrange the phyllo shells on the prepared baking sheets, about an inch apart.
  3. Toast the walnuts in a dry skillet over medium heat for 3-4 minutes, stirring constantly, until fragrant and slightly darkened. Remove from pan and set aside to cool.
  4. Fill each shell with a small dollop of fig jam (about 1/4 teaspoon) in the bottom.
  5. Add a cube of brie (about 1/2-inch) to each shell, pressing gently into the jam.
  6. Tear prosciutto into strips or small pieces and nestle 1-2 pieces into each cup on top of the brie.
  7. Top each cup with 2-3 dried cranberries and a sprinkle of toasted walnuts.
  8. Bake for 8-10 minutes, until shells are golden brown and brie is melted and bubbly.
  9. Remove from oven and let cool for 2 minutes. Sprinkle each cup with a pinch of fresh rosemary and a tiny bit of flaky sea salt.
  10. If using honey, drizzle a tiny bit over each cup while still warm.
  11. Serve immediately, warm.

Notes

Don’t overfill the shells. Take brie out of fridge 20 minutes before assembling. Watch phyllo closely as it can burn quickly. Use a piping bag for jam for cleaner assembly. Toast nuts fresh for best flavor. Make extras—people will eat 2-3 cups each. For vegetarian version, swap prosciutto for roasted red pepper strips or sun-dried tomatoes. For gluten-free, use gluten-free tart shells or endive leaves. Assemble up to 4 hours ahead and refrigerate; add 2 minutes to baking time.
