Instructions

  1. Combine the dry ingredients: In a medium mixing bowl, add instant coffee granules, granulated sugar, ground ginger, cinnamon, nutmeg, cloves, and a pinch of salt. Stir with a fork to break up clumps.
  2. Add the wet ingredients: Pour in hot water (almost boiling) and molasses. Stir gently until sugar and coffee granules are mostly dissolved.
  3. Whip until fluffy: Using a hand mixer on medium-high speed, beat the mixture for 2-3 minutes until it becomes pale, thick, and glossy, holding soft peaks.
  4. Warm the milk: While the coffee mixture whips, warm milk in a small saucepan over medium heat until steaming but not boiling (about 150°F). Alternatively, microwave for 45-60 seconds.
  5. Assemble the drink: Pour warm milk into serving glass, filling two-thirds full. Dollop gingerbread whipped coffee on top without stirring.
  6. Garnish and serve: Add whipped cream if desired, sprinkle with crushed gingerbread cookies, and add a cinnamon stick or star anise. Serve immediately.

Notes

The whipped coffee mixture can be stored in an airtight container in the refrigerator for up to three days. When ready to serve, let it sit at room temperature for 10 minutes, then whip again for 30-60 seconds. For best results, use hot water just under boiling (around 200°F) and whip longer than you think—the mixture transforms around the 2-minute mark.
