A comforting and easy slow cooker recipe featuring juicy chicken thighs infused with garlic and Parmesan, perfect for a cozy meal with minimal effort.

Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter, melted
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 1/2 cup chicken broth
  • Optional: fresh parsley for garnish

Instructions

  1. In a medium bowl, mix melted butter, minced garlic, grated Parmesan cheese, Italian seasoning, salt, and black pepper until combined.
  2. Pat dry the chicken thighs with paper towels. Lightly season both sides with salt and pepper.
  3. Coat each chicken thigh thoroughly with the garlic-Parmesan butter mixture.
  4. Place the coated chicken thighs skin-side up in a 6-quart crockpot.
  5. Pour chicken broth around the edges of the crockpot, avoiding pouring over the chicken.
  6. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until chicken is tender and juicy.
  7. Optional: Transfer cooked thighs to a foil-lined baking sheet and broil for 3-5 minutes until skin is crispy and golden.
  8. Garnish with freshly chopped parsley and extra Parmesan if desired. Serve hot.

Notes

Avoid lifting the lid during cooking to keep heat steady. Fresh garlic is preferred over garlic powder for best flavor. Broiling after slow cooking is optional but recommended for crispy skin. Use bone-in, skin-on thighs for juicier results. For dairy-free, substitute butter with olive oil and Parmesan with nutritional yeast.
