Cozy One-Bowl Banana Bread: Easy No-Mixer Recipe

cozy one-bowl banana bread - featured image

A simple, foolproof banana bread that comes together in one bowl with no mixer required. Perfectly moist with a tender crumb and golden crust, this recipe is a cozy staple for using up overripe bananas.

Ingredients

Scale
  • 3 medium overripe bananas (about 1 ½ cups mashed)
  • ⅓ cup (75g) unsalted butter, melted and slightly cooled
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) light brown sugar, packed
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (75g) chopped walnuts, pecans, or chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan and line with parchment paper, leaving overhang on the long sides.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until almost liquid (smooth, pudding-like consistency).
  3. Add melted butter, granulated sugar, and brown sugar to the mashed bananas. Stir vigorously until well combined and glossy.
  4. Add the egg and vanilla extract, stirring until fully incorporated and smooth.
  5. Sprinkle flour, baking soda, and salt over the wet mixture. Stir gently with a folding motion until just combined (a few streaks of flour are okay). If using mix-ins, fold them in now.
  6. Pour batter into prepared loaf pan and spread evenly. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil after 40 minutes.
  7. Cool in pan on a wire rack for 15 minutes, then lift out using parchment handles and cool completely on the rack before slicing.

Notes

Mash bananas very well (almost liquid) for even moisture. Do not overmix once flour is added. Use room-temperature egg for best texture. For smaller bananas, use 4; for larger, use 2. Bread is even better on the second day. Store at room temperature for up to 4 days; freeze for up to 3 months.
