  • 1 cup pumpkin puree (100% pure, not pie filling)
  • 1 cup milk (any kind, e.g., dairy, almond, oat)
  • 2 large eggs, at room temperature
  • 1/3 cup pure maple syrup
  • 2 tablespoons coconut oil, melted (or melted butter)
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (pure vanilla preferred)
  • Optional mix-ins: 1/2 cup chopped pecans or walnuts, 1/4 cup chocolate chips, or 1/4 cup dried cranberries

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin generously with cooking spray or butter.
  2. Place 1/2 cup of the rolled oats in a blender or food processor. Blitz for 15-20 seconds until a fine flour forms. Pour into a large mixing bowl.
  3. Add the remaining 1 1/2 cups rolled oats, pumpkin pie spice, cinnamon, baking powder, and salt to the bowl. Whisk to combine.
  4. In a separate medium bowl, whisk together pumpkin puree, milk, eggs, maple syrup, melted coconut oil, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients. Fold gently with a rubber spatula until just combined (do not overmix). Batter will be thick and scoopable.
  6. If using optional mix-ins, fold them in now.
  7. Divide batter evenly among the 12 greased muffin cups, filling each almost to the top.
  8. Bake for 18-22 minutes, until tops are set, golden brown around edges, and a toothpick inserted in the center comes out clean.
  9. Let cool in the tin for 5-10 minutes. Run a knife around edges, then transfer to a wire rack to cool completely.

Notes

For best texture, do not skip grinding 1/2 cup oats into flour. Let oatmeal cups cool in the pan for 5-10 minutes before removing. Use room temperature ingredients to prevent coconut oil from seizing. Check pumpkin puree for excess water and pat dry if needed. Start checking for doneness at 18 minutes. Double the batch for freezing.
