  • 1 cup (240 ml) cold brew coffee
  • ½ cup (120 ml) milk of choice (whole milk, almond milk, oat milk, or coconut milk)
  • 2 tablespoons (30 g) pumpkin puree (not pie filling)
  • 1 tablespoon (15 ml) maple syrup (or honey)
  • 1 teaspoon pumpkin pie spice (blend of cinnamon, nutmeg, ginger, and cloves)
  • ½ teaspoon vanilla extract
  • 2 tablespoons (30 ml) cold water
  • Ice cubes

Instructions

  1. Fill a tall glass with ice cubes and pour in 1 cup (240 ml) of cold brew coffee. Set aside.
  2. In a blender or bowl, combine ½ cup (120 ml) milk, 2 tablespoons (30 g) pumpkin puree, 1 tablespoon (15 ml) maple syrup, 1 teaspoon pumpkin pie spice, ½ teaspoon vanilla extract, and 2 tablespoons (30 ml) cold water.
  3. Blend or froth the mixture vigorously for 1-2 minutes until it doubles in volume and becomes thick and airy, holding peaks but still pourable.
  4. Slowly spoon or pour the pumpkin spice cold foam over the iced coffee, creating a generous layer that floats on top.
  5. Lightly dust a pinch of pumpkin pie spice or cinnamon on top for garnish.
  6. Serve immediately. Stir gently before sipping to combine or enjoy the foam first, then the coffee beneath.

Notes

Use cold ingredients for better foam. Avoid over-blending to keep foam airy. Cold water helps lighten thick pumpkin puree. Fresh foam is best served immediately as it loses fluffiness after 10 minutes. For dairy-free, use almond, oat, or coconut milk. Maple syrup can be substituted with honey or stevia for less sweetness.
