A perfectly portioned apple crisp for two, featuring tender cinnamon-spiced apples under a crunchy oat topping. Ready in under an hour, this comforting dessert is ideal for a quiet evening or a rainy afternoon.

Ingredients

Scale
  • 2 medium apples (about 300g total), peeled, cored, and sliced ¼-inch thick (recommend Honeycrisp and Granny Smith)
  • 2 tablespoons (25g) granulated sugar
  • 1 tablespoon (8g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 tablespoon (15ml) lemon juice
  • Pinch of salt
  • ¼ cup (30g) old-fashioned rolled oats
  • ¼ cup (30g) all-purpose flour
  • ¼ cup (50g) packed light brown sugar
  • ¼ teaspoon ground cinnamon
  • Pinch of salt
  • 3 tablespoons (42g) cold unsalted butter, cut into small cubes

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare the apples: In a medium bowl, toss apple slices with granulated sugar, 1 tablespoon flour, 1 teaspoon cinnamon, lemon juice, and a pinch of salt. Let sit for 5 minutes.
  3. Make the crisp topping: In a small bowl, combine rolled oats, ¼ cup flour, brown sugar, ¼ teaspoon cinnamon, and a pinch of salt. Add cold butter cubes. Using a pastry cutter or two forks, cut butter into dry ingredients until mixture resembles coarse meal with some pea-sized butter pieces.
  4. Assemble the crisps: Divide apple mixture evenly between two 8-ounce ramekins. Sprinkle topping evenly over each, pressing down gently.
  5. Place ramekins on a baking sheet. Bake for 30-35 minutes, until filling is bubbly and topping is golden brown. If topping browns too quickly after 20 minutes, tent loosely with foil.
  6. Cool on a wire rack for at least 10 minutes before serving.

Notes

Use cold butter for a crispy topping. Don’t overmix the topping; leave some pea-sized butter chunks. Let apples macerate for 5 minutes to draw out moisture. If topping browns too quickly, cover with foil. For best results, use a mix of sweet and tart apples like Honeycrisp and Granny Smith.
