Soft, warmly spiced pumpkin cookies with melty chocolate chips, perfectly sized for a quiet night in. This easy recipe makes 6-8 cookies with simple pantry ingredients and no mixer needed.

  • ¾ cup (90g) all-purpose flour
  • ¼ cup (60g) pumpkin puree (not pumpkin pie filling)
  • 3 tablespoons (42g) unsalted butter, melted
  • ¼ cup (50g) light brown sugar, packed
  • 2 tablespoons (25g) granulated sugar
  • 1 large egg yolk
  • ½ teaspoon vanilla extract
  • ½ teaspoon pumpkin pie spice
  • ¼ teaspoon cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup (60g) semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt.
  3. In a separate small bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.
  4. Add the pumpkin puree, egg yolk, and vanilla extract to the butter mixture. Whisk until fully combined.
  5. Pour the wet ingredients into the dry ingredients. Use a rubber spatula to fold together gently until no streaks of flour remain. Do not overmix.
  6. Fold in the chocolate chips. Reserve a few to press on top of the dough balls before baking.
  7. Scoop the dough into 6 to 8 equal portions. Place them about 2 inches apart on the prepared baking sheet.
  8. Press a few extra chocolate chips onto the tops of the dough balls.
  9. Bake for 10-12 minutes. The edges should look set and lightly golden, but the centers will still look soft and slightly underdone.
  10. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack.

Notes

Don’t overmix the dough. Use room temperature ingredients. Measure pumpkin puree carefully. Chill dough for 15-20 minutes for thicker cookies. Watch bake time closely. Use a light-colored baking sheet.
