A quick and easy non-alcoholic mocktail made with fresh cranberries, honey, and rosemary, topped with sparkling water for a festive, refreshing drink perfect for any occasion.

Ingredients

Scale
  • 1 cup fresh cranberries (about 100g)
  • 1 cup water (240 ml)
  • 3 tablespoons honey (60 ml)
  • 2 large sprigs fresh rosemary (plus extra for garnish)
  • 2 tablespoons fresh lemon juice (30 ml)
  • 3 cups sparkling water or club soda (720 ml)
  • Ice cubes, as needed
  • Optional: Orange slices or cinnamon sticks for garnish

Instructions

  1. In a small saucepan, combine cranberries, water, honey, and rosemary sprigs. Bring to a gentle simmer over medium heat. Let simmer for 8-10 minutes until cranberries burst and liquid turns deep ruby red.
  2. Remove from heat. Strain the mixture through a fine-mesh strainer into a bowl or measuring cup, pressing gently on the cranberries to extract juice. Discard solids. Let syrup cool for about 10 minutes.
  3. Stir in lemon juice. Taste and adjust sweetness or tartness as desired.
  4. Refrigerate syrup for at least 30 minutes until completely cool. (Syrup can be made up to 3 days ahead.)
  5. To serve, fill glasses with ice. Pour about 1/4 cup (60 ml) chilled syrup into each glass. Top with 3/4 cup (180 ml) sparkling water. Stir gently.
  6. Garnish with a fresh rosemary sprig (slap it between your palms first to release oils) and optional orange slice or cinnamon stick. Serve immediately.

Notes

For a vegan version, substitute honey with maple syrup. For a low-sugar version, use monk fruit syrup or stevia. The syrup can be frozen in ice cube trays for up to 3 months. Avoid using an aluminum pot for simmering to prevent a metallic taste.
