Instructions

  1. Reduce the apple cider: Pour 2 cups of apple cider into a medium saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer, stirring occasionally, until reduced to about 1 cup (15-20 minutes). Set aside to cool.
  2. Preheat and prep the pan: Preheat oven to 350°F (175°C). Grease a 10-cup Bundt pan thoroughly with butter or non-stick spray, dust with flour, and tap out excess.
  3. Mix the dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Set aside.
  4. Cream the butter and sugars: In another large bowl, beat softened butter, vegetable oil, granulated sugar, and brown sugar together until light and fluffy (about 3-4 minutes with an electric mixer on medium speed).
  5. Add the eggs and vanilla: Add eggs one at a time, beating well after each addition. Mix in vanilla extract and cooled reduced apple cider. The mixture may look slightly separated.
  6. Combine wet and dry: Gradually add dry ingredients to wet mixture, mixing on low speed just until combined. Do not overmix; a few small lumps are fine.
  7. Pour and bake: Pour batter into prepared Bundt pan and spread evenly. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Cool the cake: Let cake cool in pan for 15 minutes, then invert onto a cooling rack and cool completely.
  9. Make the caramel drizzle: In a medium saucepan, melt ½ cup butter over medium heat. Add 1 cup brown sugar and ½ cup heavy cream, stirring constantly. Bring to a gentle boil and cook for 2-3 minutes until slightly thickened. Remove from heat and stir in 1 teaspoon vanilla and a pinch of salt. Let cool for about 5 minutes.
  10. Drizzle and serve: Once cake is completely cool, drizzle caramel over the top. Let set for a few minutes before slicing. Optionally, sprinkle with flaky sea salt.
