Ingredients

Scale
  • 2 cups shredded cooked chicken (about 300g)
  • 8 ounces cream cheese, softened (225g)
  • 1/2 cup buffalo hot sauce (120ml)
  • 1/2 cup sour cream (120ml)
  • 1/2 cup blue cheese crumbles (75g)
  • 1 cup shredded cheddar cheese (110g)
  • 1 clove minced garlic
  • 2 tablespoons chopped green onions
  • Ground black pepper to taste
  • Optional: 2 tablespoons ranch dressing

Instructions

  1. Preheat your oven to 350°F (175°C) if baking the dip. Skip this step if serving chilled or warming on the stove.
  2. Shred about 2 cups (300g) of cooked chicken using forks or your hands. Ensure the chicken is tender and not dry.
  3. In a mixing bowl, combine 8 ounces (225g) softened cream cheese and 1/2 cup (120ml) sour cream. Use an electric mixer or whisk until smooth and fluffy.
  4. Stir in 1/2 cup (120ml) buffalo hot sauce, 1 clove minced garlic, and optional 2 tablespoons ranch dressing if desired. Mix well until evenly combined.
  5. Gently fold in shredded chicken, 1 cup (110g) shredded cheddar, and 1/2 cup (75g) blue cheese crumbles using a spatula.
  6. Add black pepper to taste. Adjust hot sauce if more heat is desired.
  7. Spread the dip evenly into an 8×8 inch (20×20 cm) oven-safe baking dish and smooth the top.
  8. Bake for 20-25 minutes until edges bubble and top is lightly golden.
  9. Remove from oven and sprinkle with 2 tablespoons chopped green onions.
  10. Serve warm with celery sticks, tortilla chips, or toasted baguette slices. Keep warm in a slow cooker on low if needed.

Notes

Let cream cheese soften at room temperature for 30 minutes before mixing. Use warm chicken for easier shredding. Adjust hot sauce gradually to control spice level. Blue cheese should be small-curd and firm for best texture. The dip can be served no-bake by mixing and serving chilled or warmed gently on stovetop. Leftovers keep well refrigerated for 3-4 days and can be reheated with a splash of milk to loosen. Freezing is possible but may alter cheese texture; thaw overnight and reheat slowly.
