Creamy Cheeseburger Potato Soup (One Pot)

A hearty, one-pot soup that combines all the flavors of a classic cheeseburger with creamy potato soup. Ready in under an hour with minimal cleanup, this family-friendly recipe is pure comfort in a bowl.

  • 1 tablespoon olive oil
  • 1 pound ground beef (80/20 recommended)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth (Better Than Bouillon recommended)
  • 2 cups whole milk
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon smoked paprika (optional)
  • Salt and black pepper to taste (start with 1 tsp salt, ½ tsp pepper)
  • 2 pounds Yukon Gold potatoes, peeled and diced into ½-inch cubes
  • 2 cups sharp cheddar cheese, shredded (from a block, such as Cabot Seriously Sharp)
  • ¼ cup dill pickle relish
  • 1 tablespoon yellow mustard
  • Optional toppings: chopped green onions, extra shredded cheddar, crumbled cooked bacon, diced tomatoes, sour cream

Instructions

  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add ground beef and cook, breaking it up, until browned and no longer pink, about 6-8 minutes. Leave about 1 tablespoon of fat in the pot.
  2. Add diced onion to the pot and cook for 3-4 minutes until softened and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  3. Sprinkle flour over the beef and onion mixture. Stir constantly for 1-2 minutes to cook out the raw flour taste.
  4. Slowly pour in beef broth while stirring constantly. Add milk, Worcestershire sauce, smoked paprika, mustard, and pickle relish. Stir to combine, scraping the bottom of the pot to incorporate browned bits.
  5. Stir in diced potatoes. Bring soup to a gentle boil, then reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally, until potatoes are tender.
  6. Test a potato cube with a fork; it should be tender but not falling apart. If still firm, simmer a few more minutes.
  7. Remove pot from heat. Add shredded cheddar cheese a handful at a time, stirring gently after each addition until fully melted.
  8. Adjust consistency: if too thick, stir in a splash of milk or broth. If too thin, use a potato masher to gently mash some potatoes in the pot.
  9. Taste and season with salt and pepper as needed. Ladle into bowls and top with desired toppings.

Notes

For gluten-free, use 2 tablespoons cornstarch mixed with ¼ cup cold water added at the end instead of flour. For dairy-free, use unsweetened oat milk or full-fat canned coconut milk and dairy-free cheddar. Soup thickens as it sits; add milk or broth when reheating. Flavors improve overnight.
