A quick and easy breakfast recipe featuring thin sandwich bread rolled with a creamy, cinnamon-vanilla cream cheese filling, dipped in a cinnamon-spiced egg custard, and fried to golden perfection.

Ingredients

Scale
  • 8 slices white or whole wheat sandwich bread (thin-sliced)
  • 4 oz (115g) cream cheese, softened
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 3 large eggs, beaten
  • 1/2 cup (120ml) whole milk or cream (or almond milk for dairy-free)
  • 1 teaspoon ground cinnamon
  • 1 tablespoon granulated sugar
  • Pinch of salt
  • 2 tablespoons unsalted butter or neutral oil (like canola) for frying
  • Optional toppings: maple syrup, powdered sugar, fresh berries (strawberries or blueberries)

Instructions

  1. In a medium bowl, combine softened cream cheese, sugar, vanilla extract, and ground cinnamon. Mix until smooth and creamy. Set aside.
  2. If bread slices are thick, gently flatten each slice with a rolling pin to about 1/4 inch thickness.
  3. Spread about 1 tablespoon of the cream cheese mixture evenly onto each bread slice, leaving a 1/2-inch border around edges.
  4. Starting at one short end, roll each slice into a tight cylinder and press gently to seal edges.
  5. In a shallow bowl, whisk together eggs, milk (or cream), sugar, cinnamon, and salt until smooth.
  6. Dip each roll-up into the egg mixture, coating all sides, and let excess drip off.
  7. Heat butter or oil in a non-stick skillet over medium heat. Place roll-ups seam-side down and cook 2-3 minutes per side until golden brown and crisp.
  8. Transfer roll-ups to a plate lined with paper towels to absorb excess oil.
  9. Serve warm with optional toppings like powdered sugar, maple syrup, or fresh berries.

Notes

Soften cream cheese before spreading to avoid tearing bread. Use medium heat to prevent burning and ensure filling warms through. Don’t soak roll-ups too long in egg mixture to avoid sogginess. Cook in batches if needed to avoid overcrowding pan. For gluten-free or dairy-free versions, use appropriate bread and cream cheese substitutes. Roll bread thin for easier rolling.
