  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • Fresh parsley or chives for garnish (optional)

Instructions

  1. Prep the Chicken (5 minutes): Pat the chicken breasts dry with paper towels. Cut into bite-sized pieces (about 1-inch cubes). In a medium bowl, toss the chicken pieces with olive oil, garlic powder, onion powder, salt, and pepper until evenly coated. Let it sit while you prepare the sauce.
  2. Make the Creamy Ranch Sauce (5 minutes): In a separate small bowl, combine Greek yogurt, dry ranch seasoning mix, milk, lemon juice, and dried dill (if using). Whisk until smooth and well combined. If too thick, add another splash of milk. Cover and set aside in the fridge.
  3. Cook the Chicken (10-12 minutes): Heat a large skillet over medium-high heat. Add a drizzle of olive oil. Add the seasoned chicken pieces in a single layer (cook in batches if necessary). Cook undisturbed for 4-5 minutes until golden brown, then flip and cook for another 4-5 minutes until cooked through (internal temperature of 165°F). Transfer to a plate and let rest.
