  • 1 pound (450g) ground beef (80/20)
  • 8 ounces (225g) egg noodles
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 8 ounces (225g) cremini or white mushrooms, sliced
  • 2 cups (480ml) beef broth (low sodium preferred)
  • 1/2 cup (120ml) sour cream (full-fat preferred)
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1 tablespoon Worcestershire sauce
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat 1 tablespoon of butter in a large skillet over medium-high heat. Add ground beef, season lightly with salt and pepper, break it up, and cook for 5-7 minutes until no pink remains and beef starts to brown. Drain excess fat if needed, leaving a little for flavor.
  2. Push beef to one side of the pan. Add remaining 1 tablespoon butter. Add chopped onion and sliced mushrooms. Cook for 5 minutes, stirring occasionally, until onions soften and mushrooms release moisture.
  3. Stir in minced garlic and cook for 30 seconds until fragrant. Sprinkle flour over mixture and stir well to coat everything.
  4. Slowly add beef broth while stirring to avoid lumps. Add Worcestershire sauce. Bring to a simmer and cook for 5-7 minutes until sauce thickens slightly.
  5. Stir in egg noodles, ensuring they are submerged. Reduce heat to medium-low, cover, and simmer for 8-10 minutes, stirring occasionally to prevent sticking, until noodles are tender but slightly firm.
  6. Remove pan from heat. Gently stir in sour cream until sauce is creamy and smooth. Adjust seasoning with salt and pepper as needed.
  7. Garnish with chopped fresh parsley and serve immediately while warm.

Notes

If sauce is too thick, add a splash of broth or water to loosen. Stir in sour cream off heat to prevent curdling. Use fresh mushrooms for best texture. Ground turkey or chicken can be substituted for a lighter version. Gluten-free flour and noodles can be used for gluten-free adaptation.
