  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional: 1/4 teaspoon smoked paprika

Instructions

  1. Prepare your ingredients: measure macaroni, shred cheddar, and soften cream cheese to room temperature.
  2. Melt 2 tablespoons unsalted butter in a large pot over medium heat without browning.
  3. Sprinkle in 2 tablespoons flour and whisk constantly for 1-2 minutes until pale golden and nutty smelling.
  4. Slowly pour in 2 cups milk while whisking vigorously to prevent lumps. Bring to a gentle simmer and thicken for 3-5 minutes.
  5. Stir in garlic powder, onion powder, Dijon mustard, salt, pepper, and smoked paprika if using.
  6. Add dry elbow macaroni directly into the pot, stir to submerge in sauce. Cover and reduce heat to medium-low. Cook 10-12 minutes, stirring every 3-4 minutes. Add milk or water if needed.
  7. Reduce heat to low. Stir in softened cream cheese until smooth, then add shredded cheddar and stir until melted and creamy.
  8. Taste and adjust seasoning with salt and pepper. Serve immediately.
