  • 1/2 cup (120 grams) plain Greek yogurt (full-fat recommended)
  • 3 tablespoons (48 grams) creamy peanut butter (natural preferred)
  • 1 scoop (about 30 grams) vanilla protein powder (whey-based recommended)
  • 1 tablespoon (12 grams) chia seeds (optional)
  • 1 to 2 tablespoons (1530 ml) pure maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • For topping (optional): extra peanut butter, sliced banana or berries, dark chocolate chips or cacao nibs, chopped nuts

Instructions

  1. Start with your jar or container. Grab a 16-ounce Mason jar or any container with a tight-fitting lid. Make sure it’s clean and dry.
  2. Add the dry ingredients first. Put 1 cup of rolled oats, 1 scoop of vanilla protein powder, 1 tablespoon of chia seeds (if using), and a pinch of salt into the jar. Give it a quick stir with a fork or whisk to combine the dry ingredients. This helps prevent clumps later.
  3. Add the wet ingredients. Pour in 1 cup of milk, 1/2 cup of Greek yogurt, 3 tablespoons of creamy peanut butter, 1 to 2 tablespoons of maple syrup or honey, and 1/2 teaspoon of vanilla extract.
  4. Stir everything together. Use a spoon, fork, or small whisk to mix everything thoroughly. This is the most important step. Make sure there are no pockets of dry protein powder or unmixed peanut butter. Scrape the bottom and sides of the jar with a spatula to get everything incorporated. The mixture should look smooth and uniform, with no visible streaks of peanut butter or powder.
  5. Taste and adjust. Yes, you can taste it now. The oats will still be crunchy, but you can check the sweetness and peanut butter level. Add a little more maple syrup if you want it sweeter, or an extra spoonful of peanut butter if you’re feeling indulgent.
  6. Seal the jar and refrigerate. Put the lid on tightly and place the jar in the refrigerator. Let it sit for at least 4 hours, but overnight is best. The chia seeds and oats need time to absorb the liquid and soften up.
  7. Give it a stir before serving. In the morning, take the jar out of the fridge and give it a good stir. The oats will have absorbed most of the liquid, and the chia seeds will have created that thick, pudding-like texture. If it’s too thick for your liking, stir in a splash of milk to loosen it up.
  8. Add your toppings. This is where you get creative. Drizzle a little extra peanut butter on top, add sliced banana, throw in some berries, or sprinkle dark chocolate chips over everything. The toppings add texture and flavor, so don’t skip them.
  9. Enjoy cold or at room temperature. You can eat it straight from the fridge, or let it sit on the counter for 10 minutes to take the chill off. Some people like to warm it up in the microwave for 30 seconds, but I prefer it cold.

The protein powder matters more than you think. Whey-based powders blend smoothly and create a creamy texture. Some plant-based powders can make the oats taste chalky or gritty. Don’t skip the stirring—take the extra 30 seconds to really mix it well. Let it sit long enough—4 hours is the absolute minimum, but overnight is best. Adjust the consistency to your liking by adding more chia seeds for thickness or more milk for thinness. Make a big batch on Sunday for the week. Don’t overdo the peanut butter—3 tablespoons is the sweet spot.
