These creamy peanut butter banana overnight oats taste like dessert but are packed with wholesome ingredients. No cooking required, just five minutes of prep for a breakfast that’s kid-approved and perfect for meal prep.

Ingredients

Scale
  • 1 cup (100g) rolled oats (old-fashioned oats)
  • 1/3 cup (80g) creamy peanut butter
  • 1 large ripe banana (about 120g mashed)
  • 1 cup (240ml) milk of choice (whole, oat, almond, or coconut)
  • 2 tablespoons (30ml) pure maple syrup
  • 1 tablespoon (12g) chia seeds
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of fine sea salt
  • Optional toppings: sliced banana, extra peanut butter, chopped peanuts, cinnamon, dark chocolate chips, Greek yogurt

Instructions

  1. Mash the banana: In a medium mixing bowl, peel the banana and mash it thoroughly with a fork until mostly smooth with a few tiny lumps.
  2. Add the wet ingredients: To the same bowl, add the peanut butter, milk, maple syrup, and vanilla extract. Stir until the peanut butter is fully incorporated and the mixture is a uniform tan color.
  3. Add the dry ingredients: Pour in the rolled oats, chia seeds, and a pinch of salt. Stir well to combine, making sure every oat is coated. Scrape the bottom and sides of the bowl.
  4. Divide into jars: Spoon the mixture evenly into 2-3 mason jars or airtight containers (about 8-12 oz each).
  5. Seal and refrigerate: Put the lids on tight and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. Serve cold or warm: In the morning, stir the oats. If too thick, add a splash of milk. Serve cold or microwave for 45-60 seconds for warm oats. Top with desired toppings.

Notes

For best texture, mash the banana into the oat mixture rather than just slicing on top. Use room temperature ingredients for easier mixing. Stir the mixture again after 30 minutes of refrigeration to ensure even distribution. Toppings should be added just before serving to prevent sogginess. Oats keep in the fridge for up to 5 days and can be frozen for up to 3 months.
