  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/4 cup (60ml) pure maple syrup
  • 2 tbsp (28g) unsalted butter, melted
  • 1/4 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang.
  2. Crush gingersnap cookies until fine crumbs. Mix with melted butter and granulated sugar until mixture feels like wet sand.
  3. Press the crust mixture firmly and evenly into the bottom of the prepared pan. Bake for 10 minutes, then remove and let cool slightly.
  4. In a large bowl, beat softened cream cheese until smooth. Add granulated sugar and brown sugar, beating until fluffy.
  5. Mix in pumpkin puree, eggs, vanilla extract, cinnamon, ginger, nutmeg, and salt. Beat just until smooth, avoiding overmixing.
  6. Spread the pumpkin cheesecake filling evenly over the cooled crust, smoothing the top.
  7. Bake for 40-45 minutes until edges are set but center jiggles slightly.
  8. Cool completely on a wire rack, then refrigerate for at least 4 hours or overnight.
  9. Whisk together maple syrup, melted butter, and cinnamon for the topping.
  10. Drizzle maple topping over chilled bars before serving. Cut into squares with a sharp knife.
