A cozy and creamy pumpkin overnight oats recipe with chai spice and toasted pecans, perfect for an easy and comforting fall breakfast.

Ingredients

Scale
  • 1 cup (90g) old-fashioned rolled oats
  • 2/3 cup (160ml) pumpkin puree (not pumpkin pie filling)
  • 1 cup (240ml) milk of choice (almond, oat, cow’s, or soy milk)
  • 1/2 cup (120g) Greek yogurt (or dairy-free coconut/almond yogurt)
  • 1 1/2 teaspoons chai spice blend (cinnamon, cardamom, ginger, cloves, black pepper)
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 cup (60g) toasted pecans, roughly chopped
  • Pinch of salt

Instructions

  1. Toast the pecans: Heat a dry skillet over medium heat. Add 1/2 cup (60g) pecans and stir frequently for 4-5 minutes until fragrant and lightly browned. Transfer immediately to a plate to cool.
  2. Mix the dry ingredients: In a large bowl, combine 1 cup (90g) old-fashioned rolled oats, 1 1/2 teaspoons chai spice blend, and a pinch of salt. Stir to distribute spices evenly.
  3. Combine wet ingredients: In a separate bowl or measuring cup, whisk together 2/3 cup (160ml) pumpkin puree, 1 cup (240ml) milk of choice, 1/2 cup (120g) Greek yogurt, 2 tablespoons maple syrup, and 1 teaspoon vanilla extract.
  4. Combine wet and dry: Pour the wet mixture over the oats and stir thoroughly until everything is well incorporated. The oats should be fully moistened but not soupy.
  5. Portion into containers: Divide the oat mixture evenly into 2-3 mason jars or airtight containers. Seal and refrigerate overnight or for at least 6 hours.
  6. Add toasted pecans: Right before serving, sprinkle the toasted pecans on top for that crunch contrast. If you add them too early, they get soggy.

Notes

Add toasted pecans just before serving to keep them crunchy. Adjust milk quantity if mixture is too thick before refrigerating. For vegan version, use plant-based milk and dairy-free yogurt, and swap honey for maple syrup. Can add fresh or dried fruit, nuts, or nut butter for variations. Store leftovers in fridge up to 4 days.
