  • 1/2 cup fresh strawberries, hulled and sliced (75g)
  • 2 tablespoons cream cheese, softened
  • 1/4 cup plain Greek yogurt (60g)
  • 1/2 cup milk (120ml, any kind such as unsweetened almond milk, regular, or oat milk)
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon chia seeds (optional)
  • 1/2 teaspoon lemon zest (optional)

Instructions

  1. Soften the cream cheese by leaving it at room temperature for about 15 minutes or microwaving in 5-second bursts until just soft.
  2. In a mixing bowl, whisk together the softened cream cheese and honey or maple syrup until creamy and combined.
  3. Stir in the Greek yogurt and vanilla extract.
  4. Add the rolled oats and chia seeds (if using) and mix well to coat the oats evenly.
  5. Slowly pour in the milk while stirring gently to combine.
  6. Fold in the fresh strawberries and lemon zest gently.
  7. Spoon the mixture into glass jars or airtight containers and seal tightly.
  8. Refrigerate overnight or for at least 6 hours to allow oats to soften and flavors to meld.
  9. Before serving, stir gently and optionally top with extra fresh strawberries or a drizzle of honey.

Notes

Use fresh strawberries when in season; frozen strawberries work if thawed slightly. Softening cream cheese before mixing prevents lumps. Adjust milk quantity for preferred consistency. Use rolled oats for best texture; instant oats can become mushy. Store leftovers in airtight containers in the fridge up to 3 days.
