  • 6 bone-in, skin-on chicken thighs (boneless skinless optional)
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • ½ cup chopped sun-dried tomatoes packed in oil
  • ¾ cup chicken broth (low sodium preferred)
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh rosemary
  • Salt and freshly ground black pepper, to taste
  • Optional: pinch of red pepper flakes
  • Optional: handful of fresh spinach

Instructions

  1. Pat chicken thighs dry with paper towels and season generously with salt and pepper on both sides. Let sit for 5 minutes.
  2. Heat a large cast iron or heavy skillet over medium-high heat and add olive oil. Once shimmering, add chicken thighs skin-side down. Cook undisturbed for 7-8 minutes until skin is golden and crisp.
  3. Flip chicken and cook for another 5-6 minutes until mostly cooked through but still juicy. Remove chicken from skillet and set aside.
  4. Reduce heat to medium and add butter to skillet. Once melted, add minced garlic and sauté for about 1 minute until fragrant but not browned.
  5. Stir in chopped sun-dried tomatoes and cook for 2 minutes to release flavor.
  6. Pour in chicken broth and scrape bottom of pan with wooden spoon to lift browned bits. Let simmer for 3 minutes to reduce slightly.
  7. Stir in heavy cream and Parmesan cheese. Simmer gently, stirring often, until sauce thickens, about 4-5 minutes. Add more broth if sauce becomes too thick.
  8. Add chopped thyme and rosemary. Taste and season with salt, pepper, and optional red pepper flakes.
  9. Return chicken thighs to pan, skin side up. Simmer on low for 5 minutes, spooning sauce over chicken to keep moist.
  10. Optional: Toss in fresh spinach in the last minute and let wilt. Remove from heat and let rest for 3-5 minutes before serving.

Notes

Pat chicken dry to ensure crispy skin. Do not overcrowd pan to sear chicken evenly. Use freshly grated Parmesan for best sauce texture. Simmer sauce gently to avoid splitting. Add cornstarch slurry slowly if sauce needs thickening.
