This recipe delivers crispy, juicy shrimp with a creamy, tangy, and mildly spicy bang bang sauce using an air fryer for a quick and easy meal without the mess of deep frying.

  • 1 pound large raw shrimp, peeled and deveined (tail-on or off based on preference)
  • ½ cup all-purpose flour (60g)
  • ¼ cup cornstarch (30g)
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs (100g)
  • Cooking spray
  • For the Bang Bang Sauce:
  • ½ cup mayonnaise (120ml, full-fat recommended)
  • 3 tablespoons sweet chili sauce (45g)
  • 12 teaspoons sriracha or another hot sauce (5-10g), adjusted to heat preference
  • 1 teaspoon lime juice (5ml)
  • 1 teaspoon honey or sugar (5g)

Instructions

  1. Pat the shrimp dry with paper towels to remove excess moisture.
  2. In a bowl, whisk together ½ cup all-purpose flour and ¼ cup cornstarch.
  3. Beat 2 large eggs in a separate bowl until smooth and slightly frothy.
  4. Dredge each shrimp in the flour-cornstarch mixture, shaking off excess, then dip into the egg wash allowing excess to drip off.
  5. Press the shrimp into the panko breadcrumbs, coating evenly without smashing the shrimp.
  6. Preheat the air fryer to 400°F (200°C) and run empty for 3 minutes.
  7. Arrange shrimp in a single layer in the air fryer basket without touching; cook in batches if needed. Spray lightly with cooking spray.
  8. Air fry for 8-10 minutes, flipping halfway through, until golden brown, crispy, and opaque inside.
  9. While shrimp cooks, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and honey until smooth. Adjust heat and sweetness to taste.
  10. Place cooked shrimp in a large bowl, drizzle sauce over, and toss gently to coat. Serve immediately.

Notes

Do not overcrowd the air fryer basket to ensure crispiness. Pat shrimp dry thoroughly before coating. Use panko breadcrumbs for best crunch. Spray shrimp lightly with cooking spray before air frying. Flip shrimp halfway through cooking. Adjust sriracha gradually to control heat. For gluten-free, use gluten-free flour and panko or crushed rice crackers. Sauce can be made ahead and stored up to 3 days refrigerated. Reheat shrimp in air fryer at 350°F for 3-4 minutes to maintain crispness.
