These crispy bacon-wrapped jalapeño popper bites are the perfect appetizer for game days, parties, or any gathering. With a creamy, cheesy filling and crispy bacon, they’re quick to make and always a crowd-pleaser.

  • 1215 fresh jalapeños, medium-sized
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup shredded cheddar cheese (sharp or mild)
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1215 slices thin-cut bacon
  • Optional: chopped fresh chives or green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or aluminum foil. If you have a wire rack, place it on top of the baking sheet for maximum crispiness.
  2. Wash and dry 12-15 fresh jalapeños. Using a sharp knife, slice each jalapeño in half lengthwise. Use a small spoon or a paring knife to carefully scrape out the seeds and white membranes. Wear gloves while handling jalapeños, or wash your hands thoroughly afterward.
  3. In a small mixing bowl, combine 8 oz softened cream cheese, 1/2 cup shredded cheddar cheese, 1/4 cup grated Parmesan cheese, 1/2 teaspoon garlic powder, 1/4 teaspoon smoked paprika, and a pinch of salt and black pepper. Mix until smooth and well combined. Taste the filling and adjust seasoning if needed.
  4. Using a small spoon or a piping bag, fill each jalapeño half with the cream cheese mixture. Don’t overfill—leave a slight mound on top, but keep it neat.
  5. Cut each slice of bacon in half crosswise. Take one half-slice of bacon and wrap it around each filled jalapeño half, slightly overlapping the ends. The bacon should cover the filling and secure it in place. If the bacon doesn’t stay wrapped, use a toothpick to hold it together.
  6. Place the wrapped jalapeño bites on the prepared baking sheet or wire rack, seam side down. Leave a little space between each bite for even cooking.
  7. Bake for 18-22 minutes, or until the bacon is golden brown and crispy, and the filling is hot and bubbly. At the 15-minute mark, check the bites. If the bacon is browning unevenly, rotate the pan halfway through.
  8. Let the jalapeño popper bites rest on the baking sheet for about 5 minutes. This allows the filling to set slightly and prevents burning your mouth.
  9. Transfer to a serving platter and sprinkle with chopped fresh chives or green onions if desired. Serve warm.

Notes

For extra crispiness, use a wire rack. If using thick-cut bacon, partially cook it for 3-4 minutes before wrapping. Room temperature cream cheese is essential for a smooth filling. For a milder bite, remove all seeds and membranes; for more heat, leave a few seeds. Overfilling the jalapeños can cause the cream cheese to leak out during baking.
