Instructions

  1. Preheat your oven to 425°F (220°C). Arrange a wire rack on a rimmed baking sheet.
  2. Pat the chicken thighs dry thoroughly with paper towels.
  3. Season the chicken generously on both sides with salt, pepper, and smoked paprika if using. Rub with olive oil to coat evenly.
  4. Place the thighs skin-side up on the wire rack, spaced apart for air circulation.
  5. Roast in the oven for 35-40 minutes, until skin is golden brown and an instant-read thermometer reads 165°F (74°C). Optionally baste with rendered fat halfway through.
  6. While chicken roasts, heat butter in a small skillet over medium heat. Add minced garlic and cook for 30 seconds until fragrant.
  7. Deglaze the skillet with chicken broth, scraping up browned bits from the bottom.
  8. Add lemon juice and chopped herbs, then simmer for 2-3 minutes until sauce thickens slightly.
  9. Remove chicken from oven and let rest for 5 minutes to redistribute juices.
  10. Pour lemon herb pan drippings sauce over chicken or serve on the side. Garnish with extra fresh herbs if desired.
