A quick and easy deviled eggs recipe featuring a creamy filling with cream cheese and a crispy everything bagel seasoning crust for a delicious twist on a classic snack.

  • 12 large eggs, hard-boiled and peeled
  • 4 tablespoons mayonnaise
  • 3 tablespoons softened cream cheese
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice or white vinegar
  • Salt and pepper, to taste
  • 2 tablespoons olive oil or melted butter
  • Everything bagel seasoning (a mix of sesame seeds, poppy seeds, dried garlic, onion, and salt)

Instructions

  1. Place 12 large eggs in a saucepan and cover with cold water by about an inch. Bring to a boil over medium-high heat, then cover and remove from heat. Let sit for 12 minutes.
  2. Transfer eggs to an ice bath for 5 minutes to stop cooking and make peeling easier. Gently tap and peel each egg, rinsing off any shell pieces.
  3. Slice eggs in half lengthwise. Scoop yolks into a bowl. Add 4 tablespoons mayonnaise, 3 tablespoons softened cream cheese, 1 teaspoon Dijon mustard, and 1 teaspoon lemon juice or vinegar. Season with salt and pepper. Mash and mix until very smooth and creamy.
  4. Use a spoon or piping bag to fill the egg white halves generously with the yolk mixture.
  5. Sprinkle the tops lightly with everything bagel seasoning. Heat 2 tablespoons olive oil or melted butter in a non-stick skillet over medium heat.
  6. Carefully place the filled eggs cut side down into the hot pan. Press gently with a spatula for even contact. Cook for about 2-3 minutes or until the seasoning forms a golden, crispy crust. Watch closely to avoid burning.
  7. Remove with a spatula and transfer to a serving platter. Serve warm or at room temperature.

Notes

Use softened cream cheese at room temperature to avoid lumps. Moderate heat is key to prevent burning the seasoning. Prepare filling and fill eggs up to 8 hours ahead and crisp just before serving. For a milder flavor, toast the seasoning lightly before applying. Can broil filled eggs for 1-2 minutes as an alternative to pan-frying.
