Juicy bone-in, skin-on chicken thighs coated with a garlicky, cheesy herb crust and baked to crispy perfection. A quick and easy dinner that’s flavorful and comforting.

  • 4 bone-in, skin-on chicken thighs (about 1.5 pounds / 680 grams)
  • 1/2 cup (50 grams) freshly grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 tablespoon dried parsley
  • 1/2 cup (60 grams) panko breadcrumbs
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon fresh lemon zest (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, combine parmesan, panko breadcrumbs, minced garlic, dried rosemary, thyme, parsley, lemon zest (if using), salt, and pepper. Mix well.
  3. Pat the chicken thighs dry with paper towels.
  4. Drizzle olive oil over the chicken thighs and rub evenly. Season lightly with salt and pepper.
  5. Press the chicken, skin side up, into the herb-parmesan mixture to coat the skin evenly.
  6. Place the coated chicken thighs skin side up on a wire rack set over a rimmed baking sheet.
  7. Bake for 30-35 minutes until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crisp.
  8. Let the chicken rest for 5 minutes before serving.
  9. Optional: Broil on high for 1-2 minutes if you want extra crispiness, watching carefully to avoid burning.

Notes

Pat chicken skin dry before oiling to ensure crispiness. Use a wire rack to allow air circulation and prevent soggy skin. Freshly grated parmesan melts better than pre-shredded. Broil briefly at the end for extra crispiness if desired. For gluten-free, substitute panko with almond flour or gluten-free crackers. For dairy-free, replace parmesan with nutritional yeast.
