  • 2 tbsp hoisin sauce
  • 1 tbsp soy sauce (low sodium preferred)
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tbsp honey or brown sugar
  • 1 clove garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 head butter lettuce or iceberg lettuce, leaves separated and rinsed
  • 1 small carrot, finely shredded
  • 2 green onions, thinly sliced
  • Optional: chopped water chestnuts
  • Chopped fresh cilantro or mint (for garnish)
  • Crushed peanuts or cashews (optional, for garnish)
  • Extra hoisin or sriracha for drizzling

Instructions

  1. In a medium bowl, whisk together hoisin sauce, soy sauce, rice vinegar, toasted sesame oil, honey, minced garlic, and grated ginger until smooth. Add the ground chicken or chopped chicken breast and mix well to coat evenly. Cover and refrigerate for at least 15 minutes.
  2. Preheat the grill or grill pan over medium-high heat until hot.
  3. Form the marinated chicken into small patties or loosely packed balls flattened slightly. Grill for 5-6 minutes per side until golden brown with grill marks and cooked through to an internal temperature of 165°F (74°C). Avoid pressing down on the patties.
  4. While the chicken grills, rinse and dry the lettuce leaves thoroughly. Shred the carrot finely, slice green onions thinly, and chop water chestnuts if using. Arrange on a serving platter.
  5. Place a grilled chicken patty in the center of a lettuce leaf, top with shredded carrot, green onions, and optional water chestnuts. Drizzle with extra hoisin sauce or sriracha. Garnish with fresh cilantro and crushed peanuts.
  6. Roll or fold the lettuce wrap and serve immediately.

Notes

Marinate chicken for 15-30 minutes to infuse flavor without making it mushy. Avoid pressing patties while grilling to keep them juicy. Keep lettuce leaves dry to prevent sogginess. Use a grill pan if outdoor grilling is not available. Store chicken and lettuce separately if making ahead.
