  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 34 garlic cloves, minced
  • 1/4 cup (85g) honey
  • 3 tablespoons (45ml) soy sauce, low sodium preferred
  • 1 tablespoon (15ml) rice vinegar
  • 1 teaspoon (5ml) sesame oil (optional)
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 stalks green onions, thinly sliced for garnish

Instructions

  1. Pat 2 pounds (900g) of chicken wings dry with paper towels.
  2. Toss wings in 1 tablespoon baking powder, 1 teaspoon salt, and 1 teaspoon pepper until evenly coated.
  3. Preheat the air fryer to 400°F (200°C) for 5 minutes.
  4. Place the coated wings in a single layer in the air fryer basket, avoiding overcrowding.
  5. Air fry at 400°F (200°C) for 25-28 minutes, flipping halfway through at around 12 minutes.
  6. While wings cook, whisk together 1/4 cup honey, 3 tablespoons soy sauce, 1 tablespoon rice vinegar, 3-4 minced garlic cloves, 1 teaspoon sesame oil, and 1/2 teaspoon red pepper flakes (optional).
  7. Transfer cooked wings to a large bowl and toss thoroughly with the honey garlic sauce to coat.
  8. Garnish with thinly sliced green onions and serve immediately.
  9. If wings are not crispy enough after glazing, return to air fryer for 2-3 minutes at 390°F (200°C), watching closely to avoid burning.

Notes

Use baking powder (not baking soda) to dry out skin for crispiness. Pat wings dry thoroughly before seasoning. Apply sauce after cooking to keep wings crispy. For gluten-free, substitute soy sauce with tamari. For reheating, use air fryer at 375°F for 5 minutes to maintain crispiness. Sauce can be made ahead and refrigerated up to 3 days.
