Crispy Honey Mustard Glazed BBQ Chicken Thighs

A quick and easy BBQ chicken recipe featuring bone-in, skin-on thighs with a crispy skin and a sticky, sweet, and tangy honey mustard BBQ glaze. Perfect for gatherings and busy weeknights.

  • 46 bone-in, skin-on chicken thighs (2 to 2.5 lbs / 900g to 1.1kg)
  • 1/4 cup (80ml) honey (raw or wildflower preferred)
  • 1/4 cup (60ml) Dijon mustard
  • 2 tbsp yellow mustard
  • 1/3 cup (80ml) smoky BBQ sauce (medium heat)
  • 1 tbsp (15ml) apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp (30ml) olive oil
  • Optional: pinch of red pepper flakes
  • Optional: chopped fresh parsley or thyme for garnish

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides generously with salt, pepper, and smoked paprika. Set aside. (5 minutes)
  2. In a small bowl, whisk together honey, Dijon mustard, yellow mustard, BBQ sauce, apple cider vinegar, minced garlic, and red pepper flakes if using. Set aside. (5 minutes)
  3. Heat a cast iron skillet or heavy pan over medium heat and add olive oil. Heat until a drop of water sizzles on contact. (3 minutes)
  4. Place chicken thighs skin-side down in the pan. Press gently with tongs to ensure even contact. Cook without moving for 8-10 minutes until skin is golden and crispy.
  5. Flip the chicken over and brush a generous layer of the honey mustard BBQ glaze on the cooked skin side. Cook for another 6-8 minutes.
  6. Flip the chicken again, glaze the other side, and cook for 3-4 more minutes. Repeat glazing one more time, allowing the glaze to bubble and thicken slightly. Total glazing time about 8-10 minutes.
  7. Check doneness with a meat thermometer (internal temperature should reach 165°F / 74°C) or cut into the thickest part to ensure juices run clear. (1-2 minutes)
  8. Remove chicken from the pan and let rest for 5 minutes before serving.

Notes

For extra crispy skin, finish under the broiler for 2-3 minutes after glazing. Avoid overcrowding the pan; cook in batches if needed. Reheat leftovers gently in a skillet to maintain crispiness; avoid microwave reheating. Apply glaze in thin layers to prevent burning.
