These crispy loaded sweet potato fries are made in the air fryer for a quick, easy, and delicious snack with a perfect balance of sweet, salty, creamy, and crunchy flavors.

Ingredients

Scale
  • 2 medium sweet potatoes, peeled and cut into 1/2-inch thick fries
  • 1 tablespoon cornstarch
  • 2 tablespoons olive oil (extra virgin preferred)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1/2 cup shredded sharp cheddar cheese (or mozzarella/dairy-free cheese)
  • 4 slices cooked bacon, crumbled (or turkey bacon)
  • 2 green onions, thinly sliced
  • Sour cream or Greek yogurt for drizzling
  • Optional: diced jalapeños or chopped cilantro for garnish

Instructions

  1. Peel and cut 2 medium sweet potatoes into roughly 1/2-inch thick fries, keeping them uniform for even cooking (about 10 minutes).
  2. Place fries in a large bowl and sprinkle 1 tablespoon of cornstarch over them. Toss well to coat evenly.
  3. Drizzle 2 tablespoons olive oil over fries, then sprinkle 1 teaspoon smoked paprika, 1/2 teaspoon garlic powder, 1/4 teaspoon cayenne pepper (if using), and salt and pepper to taste. Toss until fries are evenly coated.
  4. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  5. Spread fries in a single layer inside the air fryer basket without overcrowding. Cook for 15 minutes, shaking the basket or flipping fries halfway through.
  6. After 15 minutes, sprinkle 1/2 cup shredded cheddar cheese and crumbled bacon over fries. Continue cooking for another 3-5 minutes until cheese melts and fries are golden brown.
  7. Transfer fries to a serving dish. Top with sliced green onions, a drizzle of sour cream or Greek yogurt, and optional jalapeños or cilantro. Serve immediately.

Notes

For extra crispiness, coat fries with cornstarch before oiling. Avoid overcrowding the air fryer basket and shake or flip fries halfway through cooking. Use fresh toppings and add cheese and bacon near the end to prevent burning. Reheat leftovers in the air fryer at 350°F for 5 minutes to restore crispiness. Can be adapted for vegan or dairy-free diets by swapping cheese and sour cream.
