Crispy Pan-Seared Garlic Scapes with Lemon and Parmesan Crisps

A quick and easy side dish featuring tender, garlicky scapes pan-seared to crispy perfection, finished with bright lemon juice and paired with crunchy Parmesan crisps.

  • 1215 garlic scapes, trimmed and cut into 2-inch pieces
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon fine sea salt
  • Freshly ground black pepper, to taste
  • 1 medium lemon, zested and juiced
  • ½ cup finely grated Parmigiano-Reggiano cheese
  • 2 cloves garlic, minced
  • Optional: pinch of red pepper flakes

Instructions

  1. Rinse the garlic scapes and pat dry. Trim off any tough ends and cut into 2-inch lengths.
  2. Heat a skillet over medium heat. Sprinkle small mounds (about 1 tablespoon each) of grated Parmesan in the pan, leaving space between them. Cook 2-3 minutes until golden and bubbly, then carefully flip and cook another 1-2 minutes until crisp on both sides. Remove and drain on paper towels.
  3. Add olive oil to the skillet and warm over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Toss in the garlic scapes and season with salt and pepper. Sear, stirring occasionally, for about 5-7 minutes until edges are golden and scapes are tender but still have a little bite.
  5. Turn off the heat and immediately add lemon zest and juice to the pan. Toss well to coat the scapes. If desired, sprinkle red pepper flakes for a little heat.
  6. Transfer the garlic scapes to a serving plate and arrange Parmesan crisps on top or alongside.

Notes

Do not overcrowd the pan when cooking scapes or Parmesan crisps to ensure crispiness. Use medium-high heat to get a good sear without burning. Add lemon juice last to preserve brightness. Parmesan crisps can be made ahead and re-crisped before serving. For a vegan version, replace Parmesan crisps with toasted breadcrumbs seasoned with nutritional yeast.
