  • 1/2 cup unsalted butter, melted
  • 6 cloves garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Prep the wings (15 minutes): Pat the wings completely dry with paper towels. Place them in a large bowl.
  2. Season the wings (5 minutes): In a small bowl, mix the baking powder, salt, pepper, and garlic powder. Sprinkle this mixture over the wings and toss well to coat every piece evenly.
  3. First bake (30 minutes at 250°F): Arrange the wings in a single layer on a wire rack over a baking sheet. Bake for 30 minutes.
  4. Second bake (40-45 minutes at 425°F): Increase the oven temperature to 425°F. Continue baking for another 40-45 minutes, flipping the wings halfway through, until deep golden brown and crisp.
  5. Make the garlic butter (during the last 10 minutes): While the wings finish baking, melt the butter in a small saucepan over low heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and stir in the red pepper flakes if using.
  6. Coating time (5 minutes): Transfer the hot wings to a large bowl. Pour the garlic butter over them and toss gently to coat. Then add the grated Parmesan and parsley, and toss again until every wing is covered. Serve immediately.
