  • 46 slices bacon, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt (sea salt or kosher salt preferred)
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons balsamic glaze (store-bought or homemade)
  • ½ teaspoon garlic powder (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim the stem ends and remove any yellow or damaged outer leaves from the Brussels sprouts. Cut each sprout in half lengthwise.
  3. Chop the bacon into small bite-sized pieces.
  4. In a large mixing bowl, combine the halved Brussels sprouts, chopped bacon, olive oil, salt, pepper, garlic powder, and red pepper flakes if using. Toss well to coat evenly.
  5. Spread the mixture out in a single layer on a rimmed baking sheet, ensuring they have space to roast and not steam.
  6. Roast in the preheated oven for 20-25 minutes, tossing halfway through for even browning. The sprouts should be golden brown with crisp edges and the bacon nicely crisp.
  7. Remove from oven and immediately drizzle the balsamic glaze over the hot sprouts. Toss gently to coat without breaking up the sprouts.
  8. Serve warm, fresh from the oven.
