A creamy and fruity stuffed French toast recipe perfect for brunch, featuring a smooth cream cheese and fresh strawberry filling inside thick-cut brioche, cooked to golden perfection.

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • 4 large eggs
  • 1 cup whole milk or half-and-half
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • 8 thick slices brioche or challah bread (about 3/4 inch thick)
  • 1 tablespoon unsalted butter
  • Optional toppings: maple syrup, powdered sugar for dusting, additional fresh strawberries or berries

Instructions

  1. Prepare the filling: In a medium mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. Gently fold in diced fresh strawberries. Set aside.
  2. Prepare the bread: Slice the brioche loaf into 8 thick slices. Using a paring knife, cut a pocket into the side of each slice without cutting all the way through. Stuff each pocket generously with the strawberry cream cheese filling and press gently to close.
  3. Make the batter: In a large bowl, whisk together eggs, milk or half-and-half, granulated sugar, ground cinnamon, vanilla extract, and salt until fully combined and slightly frothy.
  4. Soak the stuffed bread: Dip each stuffed slice into the egg mixture, soaking about 30 seconds per side. Avoid oversoaking to prevent bread from falling apart.
  5. Cook the French toast: Heat a non-stick skillet or griddle over medium heat and add butter. Once melted, cook the stuffed slices for 2-3 minutes per side until golden brown and crisp. Cook in batches as needed.
  6. Serve warm: Transfer to plates, dust with powdered sugar, and add fresh strawberries and maple syrup if desired.

Notes

Use day-old brioche or challah bread for best results to prevent sogginess. Soak bread just enough to absorb egg mixture without falling apart. Cook on medium heat to ensure filling warms through without burning the outside. Can prep ahead by stuffing bread and refrigerating up to 24 hours before cooking. For dairy-free, substitute cream cheese and milk with dairy-free alternatives. For gluten-free, use gluten-free bread.
