  • 1/2 cup (113g) unsalted butter, browned
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 2 large eggs, room temperature
  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup (60g) chopped walnuts
  • 1/3 cup (80ml) salted caramel sauce (homemade or store-bought)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. Brown the butter in a medium saucepan over medium heat, stirring occasionally until golden and fragrant (5-7 minutes). Remove from heat immediately.
  3. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  4. In a large bowl, mash bananas until smooth but slightly chunky. Add browned butter (warm, not hot), granulated sugar, brown sugar, eggs, and vanilla extract. Mix gently to combine.
  5. Fold the dry ingredients into the wet ingredients using a spatula until no flour streaks remain. Avoid overmixing.
  6. Fold in chopped walnuts evenly.
  7. Pour half the batter into the prepared loaf pan. Drizzle half the salted caramel sauce over the batter. Pour the remaining batter on top, then drizzle the rest of the caramel. Swirl gently with a knife or skewer to create a marbled effect.
  8. Bake for 55-65 minutes, starting to check doneness at 55 minutes by inserting a toothpick into the center. It should come out with a few moist crumbs.
  9. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Stand close and stir often when browning butter to avoid burning. Fold batter gently to keep crumb tender. Swirl caramel lightly to avoid it disappearing or forming overly sweet pockets. Tent with foil after 40 minutes if caramel bubbles too much. Brush top with browned butter for a shiny crust. Store wrapped at room temperature for up to 3 days or freeze slices for up to 3 months.
