This moist and tender banana bread uses just three ingredients—ripe bananas, Greek yogurt, and self-rising flour—for a simple, healthy treat that’s perfect for breakfast or snack.

  • 3 medium ripe bananas (about 1 ½ cups mashed)
  • 1 cup plain Greek yogurt (245g), full-fat or 2%
  • 1 ½ cups self-rising flour (190g)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper or grease it well.
  2. In a medium mixing bowl, mash the bananas with a fork until mostly smooth. A few small lumps are fine.
  3. Add the Greek yogurt and stir until fully combined. The mixture will look pale and creamy.
  4. Fold in the self-rising flour gently with a spatula or wooden spoon, stirring just until no streaks of flour remain. Do not overmix.
  5. Pour the batter into the prepared loaf pan and spread it evenly. The batter should come about two-thirds up the sides.
  6. Bake for 45-55 minutes, until the top is golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs. The internal temperature should be around 200°F (93°C).
  7. Cool in the pan for 10 minutes, then lift the bread out using the parchment overhang and cool completely on a rack before slicing.

Notes

Use very ripe bananas with brown spots for best sweetness. Do not overmix the batter to avoid dense bread. Let the bread cool completely before slicing to prevent crumbling. For a vegan version, use thick plant-based yogurt. For gluten-free, use a gluten-free all-purpose flour blend with xanthan gum.
