  • 2 oz (56 g) dark chocolate (at least 70% cacao) for drizzle

Instructions

  1. Combine 1 cup peanut butter, 1 cup protein powder, and 1/3 cup honey in a mixing bowl. Stir thoroughly until smooth and sticky. If too dry, add a teaspoon of water or more honey slowly.
  2. Chill the mixture in the fridge for about 10 minutes to firm up.
  3. Line a baking sheet or plate with parchment paper. Portion out about 1 tablespoon (15 g) of mixture per ball and roll into tight, smooth balls. Place on parchment paper. Yield is about 15 to 20 balls.
  4. Break 2 oz dark chocolate into small pieces and melt gently using a microwave in 20-second bursts or a double boiler on low heat until smooth.
  5. Drizzle the melted dark chocolate over the peanut butter protein balls using a spoon or piping bag.
  6. Return the balls to the fridge for at least 15 minutes to let the chocolate harden and set.
