This easy 5-ingredient crockpot chicken tacos recipe is proof that you don’t need a ton of ingredients or a lot of time to make a truly memorable meal. It’s the kind of recipe that saves your sanity on a busy weeknight and impresses guests without any stress.

Ingredients

  • 1.5 to 2 lbs boneless, skinless chicken breasts
  • 16 oz jar of your favorite salsa
  • 1 packet (or 3 tbsp) taco seasoning
  • 1/2 cup chicken broth
  • 2 tbsp fresh squeezed lime juice

Instructions

  1. Place chicken breasts in the bottom of the crockpot in a single layer.
  2. Pour chicken broth and salsa over the chicken. Do not stir.
  3. Sprinkle taco seasoning evenly over the chicken and salsa.
  4. Cook on LOW for 6-8 hours or HIGH for 4-5 hours, until chicken shreds easily with a fork.
  5. Remove chicken from crockpot and shred with two forks.
  6. Return shredded chicken to crockpot, add lime juice, and stir. Let sit for 5-10 minutes.
  7. Serve on warm tortillas with desired toppings.

Notes

For a thicker sauce, remove lid for last 30 minutes of cooking. Chicken thighs can be substituted for more flavor. Frozen chicken can be used directly; add 1-2 extra hours on LOW. Let chicken rest 5 minutes before shredding for best texture.
