This easy 5-ingredient crockpot soup recipe is proof that you don’t need a long ingredient list or complicated techniques to create something genuinely memorable. It’s the kind of recipe that becomes a quiet hero in your kitchen, the one you turn to when you want to feed people well without spending your whole day in the kitchen.

Ingredients

Scale
  • 1.5 pounds boneless, skinless chicken thighs or breasts
  • 4 cups low-sodium chicken broth
  • 1 medium yellow onion, diced (about 1.5 cups)
  • 3 medium carrots, peeled and sliced into rounds (about 2 cups)
  • 2 cups frozen peas

Instructions

  1. Prep your vegetables first. Dice the onion into roughly half-inch pieces. Slice the carrots into rounds about a quarter-inch thick. Set the frozen peas aside.
  2. Add the chicken to the crockpot in an even layer at the bottom.
  3. Scatter the diced onion and sliced carrots over the chicken. Pour the chicken broth over everything.
  4. Cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender enough to shred easily with a fork.
  5. Remove the chicken and shred it using two forks. Discard any large pieces of fat or gristle.
  6. Return the shredded chicken to the pot and add the frozen peas. Stir and let the residual heat warm the peas through for about 5 minutes.
  7. Taste and adjust seasoning with salt and pepper as desired.
  8. Serve immediately or keep warm on the crockpot’s warm setting.

Notes

Don’t lift the lid during cooking. Layer dense vegetables at the bottom. Trim chicken before cooking. Shred chicken while warm. Season at the end. For hosting, start the soup by 11 am for a 6 pm dinner. The soup tastes even better the next day.
